This is a basic muffin recipe using the natural sweetness of butternut squash. This recipe uses minimal amounts of fats and sugar. It’s even possible to make it gluten free. I make recipes using what I have on hand and I have made this recipe using all kinds of different gluten free flours.
Adapted from The Sunday News Family Cookbook, 1962 edition. It was originally a banana bread recipe that I turned into muffins and I used less fat and less sugar. After many trials I came up with a specific ratio of wet and dry ingredients that worked for me.
When experimenting with different ingredients – if the batter looks too dry you can add a bit of water or milk. Don’t add too much liquid though because fruits and vegetables will create moisture as they cook. My batter in this recipe is pretty thick and the muffins came out moist. I forgot to cut one in half to show the texture but will do next time.
In this recipe, I used about 1/2 cup of okara flour and 1.5 cup of unbleached white flour. Okara is what the Japanese call the pulp that is left after making soy milk for tofu. I show in a tofu recipe video how I dehydrated the pulp and grind it into a flour. I could have used more okara flour in the muffin recipe but I wanted to save some for making cookies.

2 cups pulverized or grated raw butternut squash
1/4-1/2 cup sugar or maple syrup
1/4 cup avocado oil or melted butter
1 tsp vanilla
1 large egg
2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
Preheat oven to 375F and bake for 28 minutes. We freeze the muffins once cooled and and then heat them in a 350F oven for 10 minutes. They can also thaw in a lunch bag for a breakfast, snack or dessert on the go.
